On a recent trip to Europe, flying through Heathrow in London, I was fortunate to enjoy two meals, one on the way over, one on my return at this fine establishment. The restaurant is in Terminal 5 behind security. It’s setup as a large oval bar in the middle of a wing leading to shops and restaurants.
There is a small glass partition/shelf between customers and the amazing staff. Behind the glass the staff prepare sensational works of art both visually and tastefully. I discovered an amazing dish consisting of burrata cheese and mixed tomatoes. It was appealing visually and to the palate. I easily could have ordered two but restrained myself, barely.
Back home, this experience has been on my mind. Hoping to recreate, I learned we are able to get burrata cheese sourced locally from the great state of Vermont! I found some at Roach Brothers along with a variety of cherry tomatoes. Pictured above, is my “recreation.” I’m getting together with my friends who traveled with me in a few weeks and I plan to bring this as an appetizer.
There is no substitute for fresh ingredients. I think that’s the biggest thing I miss from my trip to Italy, everything there is so fresh, they live farm to table every day, not just promote in a few high-end restaurants.
