On a recent trip up to the Champlain Valley, a.k.a. “Gods Country,” I enjoyed an excellent brunch at Pauline’s Café & Restaurant located in South Burlington. The restaurant is warm and inviting with beautiful wood paneled walls, comfortable seating and a bright dining room with abundant windows. Pauline’s Café offers brunch on Sunday mornings, but not until 10:30 am. I arrived a few minutes early, and the staff was welcoming seating me immediately and offering drinks. The waitress brought over a complimentary popover and homemade spice bread, although served with Cabot butter, the popovers stood on their own. The brunch menu is eclectic and creative. I saw the corned beef hash and looked no further! The portions are generous, and ingredients are high quality. As mentioned, I chose the corned beef which was a “layered” hash. The bottom layer comprised of a vegetable mixture consisting of carrots, onions, fennel, beets, and celery. Next layer topped with a healthy portion of homemade corned beef. Finally topped with scrambled eggs and cheddar cheese. Homefries, two slices of homemade wheat bread and garnished with two slices of fresh fruit! Needless to say, I did not leave hungry nor did I finish everything. Pauline’s Café filled up fast within 15 minutes of opening the dining room was near capacity. The wait staff is friendly, attentive and knowledgeable. If you find yourself in the Burlington, VT area, I highly recommend Pauline’s for Sunday Brunch!
